Healthier Strawberry Bread

Eating healthy on a budget is nearly impossible sometimes. Fresh fruits and vegetables can cost an arm and a leg, and are really only “fresh” for a few days. I find this especially difficult for a family of 2. Things in our fridge tend to go bad before they are completely consumed. One strategy I am attempting to adopt is to ONLY buy what is on sale, produce wise. In our kitchen, we always love to have peppers, onions, lettuce, and tomatoes on hand, but sometimes they are very $$ and not so fresh. So instead we are attempting to try new veggies by only purchasing those on-sale items.

Yesterday I took a trip to Shaw’s and found 2 lb packs or strawberries for $3.99 each! I quickly grabbed 2 packages and never looked back. But then I realized… what the heck am I going to do with all these berries? Some went into the freezer for smoothies and protein shakes, and some went into a delicious new recipe I found!. I mixed and matched some ingredients from several different recipes I found to make it as easy and healthy as possible!


2 cups whole wheat flour

2/3 cup sugar

1/2 tsp baking soda

2 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

2 egg whites

1 tsp vanilla extract

1/2 cup applesauce (a substitute for oil)

 2 cups of chopped strawberries

1/2 a medium banana



Preheat oven to 325. Combine all dry ingredients in a mixing bowl. In a mixer,( I used my magic bullet) add egg whites, vanilla, banana, applesauce, and about 1/2 the strawberries and mix until there are no chunks. Add wet ingredients to dry and stir until combined. Stir in the remaining strawberry chunks. Pour into greased bread pan and bake for 40 minutes.



This bread is sweet and delicious, and a guilt free snack!
