This week’s What I Ate Wednesday is an account of what I ate on Tuesday June 5th.
Special K Multigrain Oats and Honey cereal with fresh blueberries and skim milk.
Lunch: 10:50 (only 7 days left of this crazy lunch schedule)
A honey ham sandwich with lettuce, tomato, and American cheese on an Arnold Sandwich Thin.
I also had the rest of my Organic-Low Sodium Tomato & Roasted Red Pepper Soup from Trader Joe’s with pepper and fresh basil from the ghetto garden 🙂
CONFESSION: I don’t like this low sodium kind. I am a salt lover and proud of it! I add sea salt to my soup. 🙂 shhhhh

Snack #2: 3:00

I mentioned last night that I prepped a crock pot meal for tonight.
Ingredients: 3 Frozen chicken breasts, half of a chopped yellow onion and these guys!
Ok…before you judge me for adding booze to my meat once again (see our other booze bag recipes for Jack Daniel’s Steak and Italian Beer Sausage) let me remind you that cooking with these removes the alcohol content! The whiskey was left in our fridge from a friend and since neither of us drink whiskey we decided to let Jack lend it’s smokey flavors to our food!
BBQ Pulled Chicken:
I just threw everything into the crock pot last night to soak and this morning Nolan plugged it in and 6 hrs later…..
The apartment smelled AMAZING and just like a BBQ pit. Trust me I could have eaten this WHOLE pot, but using my better judgement and ignoring the STRONG desire of my Prednisone strung out appetite I used some restraint.
I threw together the lamest salad of all time because we have like zero veggies. Lettuce, grape tomatoes, low fat Parmesan cheese, and some Ken’s light Caesar dressing.
Popsicle! These icy treats are soooo good. Also- since it’s a cold treat I have to eat it slowly and it seems like I get to eat more 🙂
