WIAW: Wedding Addition

Hey everyone. I have been struggling to get back into a routine since my weekend in NH so please forgive my lack of posting.

Yesterday was a crazy day. I worked several jobs AND we had our food tasting for the wedding!

BREAKFAST:

Wheat toast with pb2, a hard boiled egg, and a handful of strawberries.

LUNCH

For lunch, I was craving vegetables, and luckily we got an amazing haul from this week’s farm share (which I didn’t have a chance to post.) I made a big salad and topped it with some roasted seasonal vegetables.

The Big Salad:

  • Lettuce
  • cherry tomatoes
  • zucchini
  • summer squash
  • carrots
  • eggplant
  • green peppers
  • cucumbers
  • fat free feta cheese
  • Ken’s light Italian dressing

This totally made me think of another one of my favorite Seinfeld episodes.

DINNER

This evening we headed to our food tasting. We sampled numerous dishes from all 3 courses and finally settled on a menu. These are the entrees we sampled.

#1: Grilled sirloin steak with twice baked potato and an asparagus bouquet.

#2 Pork tenderloin with an apple chutney and roasted harvest vegetables.

#3: Chicken breast with a maple glaze, roasted potatoes, and green beans.

#4: Chicken breast with prosciutto shavings over polenta with grilled asparagus.

We selected a chicken and an alternative…..Any guesses what we went with?

Yup #1 and #4. How could I turn down a steak? The only change we made the dishes was we took the harvest veggies from the pork dish and substituted them with the asparagus on the chicken dish. They were all so delicious! It was so fun to sit and sample the different dishes.

We were also able to iron out a few wedding details. I never knew there were so many decisions that went into wedding planning. I had 5 different napkin folding options to choose from! FIVE! Who looks at the napkins? Everyone better acknowledge our fan folded napkins! haha
