Hello all and welcome to another What I Ate Wednesday! I just love Wednesdays. 🙂 Today I will get countless ideas and recipes to add to my collection. *food nerd*

Peas and Crayons

BREAKFAST:

Sorry it’s so blurry! I am still getting used to eating so early in the morning. As you can tell, I’m not much of a morning person/photographer at 7am.

LUNCH:

Grapes with Laughing Cow cheese (a favorite snack of mine), chopped bell peppers with roasted red pepper Sabra Hummus , and the main event…a chicken and avocado salad stuffed tomato! Say that 5 times fast!

Remember my lunch goal for this school year? Well my first attempt was this little guy!

So?! How did I do?!

Ok so it didn’t look EXACTLY like the picture but it still tasted really good! And I got rid of some leftovers. Every week, Nolan and I make what we call “bonus chicken.”

Bonus Chicken- (noun) Extra chicken cooked in anticipation of future meals.

Last week we made a stir fry one night and we purposely cooked twice the amount of chicken we needed. We used what we needed and the rest became bonus chicken which is stored in the fridge and used for salads, additions to pasta sides, pizza toppings, omelets, the possibilities are endless. …You’re at the edge of your seat aren’t you? Ok, I’ll get off my chicken rant and just give you the darn recipe.

One step. That’s it. This made about 2 1/2 servings.

I have yet to have a stuffed food item that I didn’t love. Stuffed mushrooms, stuffed peppers, stuffed haddock, stuffed lobster, stuffed crust, stuffed spaghetti squash, double stuffed Oreos. …Sorry, another food rant. Onto dinner.

DINNER:

Yum!

I took out some cod before work this morning and it was defrosted by the time I got home and ready to be cooked! I slightly modified this recipe, a favorite of ours, to concoct dinner.

While the fish was baking, I made the sauce. Instead of canned tomatoes and jalapenos, I took out the fresh tomatoes and jalapenos we haD from Bobbin Farm. I boiled the tomatoes and then mashed them up, skins and all, and added oregano, basil, and garlic salt.

Served over whole wheat pasta…..dinner was served!

Now many of you are thinking “that looks too hard!” This meal literally took me 25 minutes to make. While the fish was baking, I whipped up the sauce and the pasta. It’s really not that hard/time consuming to make a decent meal. DON’T GIVE ME EXCUSES……

DESSERT:

Last night I got a craving for something chocolaty! Luckily, I had the new chocolate chunk Chobani on hand and I had been dying to use it! I followed this recipe from the Chobani website to satisfy my cravings. I made a few slight modifications because I don’t have a raging sweet tooth and a whole bag of chocolate chips AND 1 cup of sugar sounded excessive.

Now, you may be thinking “Jeeze Katy, that’s a crap load of yogurt to consume in 1 day! Well, this may have something to do with it….

OH YES! I came home from my wedding weekend, and imagine my surprise when I found a giant case of Chobani on my doorstep. 🙂

The wonderful people at Chobani have sent me their finest, and guess what? You can be the lucky recipient of a crap ton of yogurt too!

    My favorite Chobani is lemon or strawberry-banana. I never ever thought those would be, but I ended up LOVING them and eating lots of ’em.

  3. My favorite Chobani is blueberry …apple cinnamon is also so good ! There are so many kinds i have not even tried yet so I am excited about your giveaway! PS congrats on the new job, good luck with wedding planning, and on “making it!”

    • Thank you! So many things to look forward to. 🙂 It’s funny you mentioned those two flavors because they are actually my least favorites. I love how everyone has different pallets. If you haven’t tried the pineapple one or the pomegranate, you def should. Those are my faves.

  4. I’m still dying to try that chocolate chunk chobani! That dessert looks awesome! I love Greek yogurt and it always keeps me full! My favorite flavor is the pineapple chobani!

  5. Yummy!! I eat chobani pretty much everyday! I have some in my WIAW too. I didn’t know there was a chocolate chunk version, that sounds fantastic! My faves are pomegranate, blood orange, and apple cinnamon.. YUM! How exciting that you got an entire box. Your day sounds healthy and delicious overall. Love that fish recipe!

  6. I love, love, love the Lemon Chobani! So light and refreshing:) Your brownies look amazing, and I think your tomato looks even yummier than the original pic:) I love adding Chobani to Green Monster smoothies- they really boost the texture and flavor!

  7. I literally love all Cho, but my favorite right now has been raspberry, which I’ve been eating with Love Crunch Chocolate Berry granola. Heaven in my mouth!

  8. Oh there are really too many different ways to use Chobani yogurt! I have created smoothies using the chocolate chunk (java chip smoothie) as well as freezing the pineapple variety with some coconut for quick and protein filled (not to mention filling) ice cream! I also used the blueberry flavored variety to make muffins, which allowed for a very moist baked good.

    I think the pineapple is my favorite because it brings me a little taste of the tropics no matter where I am 🙂

  9. Hooray- you’ve made it as a blogger 😉 Seriously- congrats, I’d feel like I’ve made it too! …..I would FLIP OUT over a case of Chobani!!! Seriously.
    I love all flavors- can’t really choose. Maybe pineapple, or their new chocolate chunk one with the vanilla, or mango, or blood orange? See, can’t choose!!!
