Morning! I had yesterday off because of the Jewish holiday so I tackled many wedding things! I dropped off my dress to get pressed, took swatches to the florist and bakery, and met with the photographer. 18 days! Crazy!
Before I got moving I made sure to eat a good, filling breakfast.
Oatmeal topped with cherry vanilla granola. It has been pretty chilly here in the mornings and a bowl of hot oatmeal has really been hitting the spot!
After running various errands, I put together a quick wrap for lunch.

So many of you have requested the new crock pot chicken drumstick recipe from last week! All I used was one ingredient. 1!
I bought this marinade last summer on my trip to Bermuda. It’s a jerk-style sauce that’s a bit thicker than bbq sauce. I have seen many similar sauces at stores such as Christmas Tree Shop and even T.J Maxx. I simply skinned about 6 drumsticks and dumped in about 1/3 of the merinade. I let it all sit overnight and turned on the crock pot first thing in the morning.
6 hrs later…..
On the side, I took a bunch of potatoes, green beans and onions we had from our farm share, sprayed them with olive oil cooking spray and baked them at 400 degrees for 45 minutes. Sprinkle on some salt and pepper and there ya go!

The sauce was sweet and tangy with a hint of spice thrown in. I practically inhaled this meat! And I certainly sucked the bones dry. 🙂 No shame.
Today I go back to work and back into the swing of things. I love my long weekends but it’s difficult to maintain a healthy eating schedule. Believe me, there is a ton of snacking and bites taken throughout the day. Go kick today’s butt. 🙂
