Good morning and welcome to day 2 of the work week. I have an early meeting this morning so I’m sure I will desperately be missing the 15 minutes of sleep I lost this morning. 😦
On Sunday, Nolan and I headed to Julio’s Liquors in Westboro MA.
We had never been to Julio’s before, they they are a Phantom favorite and we had heard amazing things! What initially attracted us to this liquor emporium was their “make your own 6 pack” center. They have hundreds of micro brews, many of which were brewed here in Massachusetts.
We even found a section of Jack’s Abby beer! They are located here in Framingham and we have used their beer in many of our recipes.
Since we are so great at decision making, we ended up being there for about an hr. However, I finally assembled my Pumpkinfest 6 pack!
I decided to get only pumpkin flavored brews in an attempt to find a favorite. When I finish them all, I will be sure to record my findings and share them with you all. 🙂
This weekend we kept it low-er key and only had a few family members over for the Pats game. Thank GOD we won. It’s been a very frustrating season to say the least. Just because attendance was low, doesn’t mean we skimped on the food. As usual I forgot to take a pic of the full snack table, but here are some of the goodies we had:
- Sweet and sour kielbasa
- chips and salsa
- pita chips and yogurt dip
- spicy pumpkin seeds
- assorted egg rolls
- pumpkin cookies
- candy corn
- cheese and crackers
I am so siked to share one of my favorite creations with you all, our assorted egg rolls. I wish I could take 100% of the credit for these, but they are actually something my dad thought up and has been making for years. They are so diverse and can be filled with just about anything. For Sunday’s party, we made 3 kinds.
- Steak and cheese
- Spinach and feta
You can find these egg roll wrappers in the La Carte section of your grocery store. I haven’t seen them at Trader Joe’s, but most supermarkets carry them.
They are pretty thin, but don’t tear too easily.
For egg roll combo # 1, Nolan cooked up some shaved steak in bbq sauce, along with some chopped bell peppers (frozen) and diced onion.
He topped each roll off with a thin slice of Pepperjack cheese to give it a little spice.
While the meat man was cooking, I mixed up some thawed out frozen spinach (warmed in the microwave) and mixed it with some feta cheese and Italian salad dressing for combo #2.
#3, the final combo, pizza, was comprised of marinara sauce, peperoni slices, and American cheese.
After a few minutes in some hot oil, these babies get a crispy shell.
They are to die for! The shell is crispy and the insides are gooey and melty. They are always a crowd favorite. Nolan is working on a buffalo chicken with crumble blue cheese recipe for next time. 🙂
Nolan and I agree that when we open our restaurant some day, these will be the first thing added to the appetizer section of the menu.
