Since Nolan and I started doing our date nights we are trying not to eat out on the weekends. We tend to go out for breakfast many weekends, so instead, we have been trying out new recipes and techniques when it comes to cooking breakfast.
One of my latest creations was an omelet casserole!
I used a non stick pan so it came right out of the casserole dish.
The eggs that were around the edges got a tad crispy, but the insides were light and fluffy!
This breakfast was a nice alternative to the traditional omelet or egg scramble. It actually held us over for 2 days and it tasted just as good reheated. I’m excited by all the possible versions of this casserole!
