Time for my favorite post of the week!

What I Ate Wednesday Healthy Holiday Recipes

One of the new-er things my doctor has me doing is waiting a whole hour after I take my medication to eat or drink anything. This has resulted in packingย  breakfasts that I assemble once I get to work.


Organic cinnamon oatmeal from Trader Joe’s, a hard boiled egg, and a cup of Golden French toast coffee. Unfortunately, this was the last of my favorite k-cup flavor. ๐Ÿ˜ฆ Time to go shopping!

SNACK: 10:30

Red peppers are one of my absolute favorite vegetables! They have so much flavor and they are such a beautiful color.

(The grapes were part of lunch)


LUNCH: 12:00

Over the weekend Nolan and I grabbed a quick lunch at Subway. I got a $5 Footlong, and saved half for my lunch yesterday. Instead of buying chips, I had some Laughing Cow and grapes. *Discipline.*


Black forest ham and cheese on 9 grain bread, with all the veggies except olives (YUCK) and jalapenos. I also skip the oil/dressing, and put on my own fat free stuff at home.



DINNER: 5:30

Last night was date night! Nolan was in charge this week, and he made us a reservation at The Dolphin. For Christmas, I bought him (us) a Groupon at this local seafood restaurant, because it was wayyy too good a deal to pass up!

The Groupon was $30 for a lobster dinner for two! It included a shrimp cocktail appetizer, twin lobsters, and 4 sides. AND when we ordered, the waiter informed us that since we were getting the lobster, we were entitled to a few “upgrades” if we so desired. Oh, we desired.

We started with some bread


Then came the colossal shrimp cocktail


Nolan “upgraded” his meal by adding some scollop stuffing for $4


The “upgrade” I chose, was to add on some steak tips for $4!ย  For my sides, I chose broccoli, and rice pilaf. 2013-01-08_18-09-17_850

What did we learn tonight folks?

Nolan and I are NOT white tablecloth people. By the end of the meal, our table looked like a bunch of 5 yr olds had a food fight on it. But we had so much fun cracking open our crustaceans and of course playing musical forks.

At the end of the evening, our bill came to a whopping $11 (The “upgrades” plus tax) The food was fantastic, the service was excellent, and it was worth every penny! Our only regret? We didn’t buy 2 Groupons.

Another day of great eats, and another very successful date night. ๐Ÿ˜€

  1. NOOO. I want no one else to enter to up my chances LOL. ๐Ÿ˜‰ Anyways, I would have to agree…I’ve had lobster a few times and I’m not a white tablecloth person too. I really think I’m one of the messiest people in the world. I’d have it ruined.

  2. I love, love, love Groupons! I bought one awhile back for a steak and lobster house in the city where I live. I am SO excited to try it, especially after reading the restaurant’s menu! Perfect anniversary date night!

  3. Ohh man, I wish we had PB2 here in NZ! But peanut flour is kinda the same thing I guess. Love this post! ๐Ÿ˜€
