Good morning all. I’ll tell ya, its so much easier to get out of bed when the sun is shinning and birds are chirping. I can tell today is going to be a great day. AND it’s the first reinstated Date Night! We took a small hiatus from our weekly date nights for several reasons but now that everything is settling down and Nolan’s back to work, they are back on and I couldn’t be happier!
You ever go through phases where you love foods, and then phases where you hate them? Hummus and I have love hate relationship. Lately we have been on the outs but the last time I went shopping I suddenly got a craving for it!
This roasted red pepper hummus went perfectly with my cucumbers, peppers, and celery.
I also enjoyed a generous portion of this leftover buffalo shrimp mac and cheese that Nolan’s step dad made for the cookout. It has giant chunks of shrimp and jalapenos in these creamy cheesy noodles. YUMM
Dinner was one of my favorite meals! Trader Joe’s Taco night!
Tacos have always been a favorite of mine because of all the fresh and diverse flavors and textures that all come together in one dish.

I made a giant taco salad with all the fixin’s in an edible bowl.
I scarfed down my food because we made plans to stop by and visit this little peanut!

Ugh soooo adorable. I couldn’t be happier for Ashley and Shawn.
Believe it or not, this is the first pregnancy I have witnessed up close from start to finish, (that I recall) and I’m still in amazement. Amazement, but not inspiration. 😉
So I went shopping at Trader Joe’s the other day…and I went a little crazy per usual. I went right after work, before dinner so my appetite really took control of the cart!
I was so excited because I finally found the vegetable bird nest’s that I had been searching for the past month or so! They inspired me to put together an appetizer menu for dinner!
I decided to pick two other bite size treats which I had never tried before.
My favorite was definitely the veggie nests! They are basically veggie tempura, minus a super thick batter. It’s like an onion ring! YUM!
The mushrooms were good, but they were a bit soggy from being frozen. The spinach and cheese mix inside them was very tasty! I wish I could buy it by the jar to dip chips into!
The cheese bites were fantastic! I will certainly buy these again for tailgating parties. They are quick, easy, and very poppable! And really folks, who doesn’t love a fried ball of cheese?!
