WIAW: Spring Flavors

Hey everyone. How’s your week going so far? This post was originally going up for last week’s WIAW, but I got a bit sidetracked. Better late than never huh? 

Peas and Crayons


1 of the perks and curses or working 99% with women is that there are always delicious goodies to be found in the teachers room! Most of the time people make something over the weekend like cookies or breakfast items and bring them in to share so they don’t consume the whole batch. You should have seen the lounge on Valentine’s Day! Everyone took a few chocolates out of their box and left the rest on the table for the chocolate craving masses.
Well on Monday I was minding my own business, making my coffee and heating up my muffin when I looked over and saw an entire bin of danish. Did I need a danish? No. Was my breakfast already made? Yes. Did I take a danish? Abso-fricken-lutely!


One ….idk what flavor danish, 1 cranberry orange muffin, and a hot cup of coffee. Breakfast of carb-loving-champions. To be honest, the danish won the breakfast war and the muffin ended up in the trash after 2 bites. Probably for the best. 😀



Very springy huh?
Tuna salad with celery sticks. I added laughing cow, 1/2 tbsp Miracle Whip (because I didn’t have any plain Chobani) and cut up some fresh tomato. Delish!



We had one pork tenderloin left after our “buy one get 2 free” steal a few months ago. Yes, months. Now that the weather is nice, I grilled the bad boy up! I topped it with a delicious new chutney that my fairy godmother gave me to try and omg was it good!


It’s mango ginger so it has a nice balance of sweet and tangy with a little bite! It was the perfect topping for the pork!


Another Trader Joe’s score! 🙂 On the side I cooked up some organic quinoa with a tbsp of light Italian dressing, diced tomatoes, and basil. For veggies, I reached deep into the freezer and pulled out a Steamfresh bag of broccoli, cauliflower and carrots in a light cheese sauce. YUM!



Ones the weather gets nice, I just crave ice cream! This particular day I was craving some Dairy Queen! Perfect end to the day. 🙂

  1. Oh my goodness. I thought I was the only one who said abso-freakin-lutely. It’s something that my dad and I say as a joke all of the time. I’m glad to see that you’ve made it back for this week’s WIAW! That soft serve… girl, ice cream with jimmies is my weakness!

  2. That ice cream is so pretty- almost too pretty to eat 😉 And that mango chutney… ohh man, me want! This time of year, I crave everything and anything from the veggie and fruit stands at the local farmer’s market 🙂
