Good morning all. It is a miserable looking day outside and I am hoping and praying we don’t get too much snow. I really thought we were done with this weather. I’m seriously starting to doubt that groundhog!
Yesterday had some good eats! I had to get up early to take care of some Tasterie stuff, so I made myself another breakfast sampler.
1/2 cranberry scone, turkey bacon, strawberries, and an egg white scramble with frozen peppers and spinach.
I also had time to throw together a little trail mix to snack on throughout the day.
M&M’s, Special K Fruit and Yogurt, dried cranberries, walnuts, and sunflower seeds. Sweet and Salty!
Since yesterday was a very busy day for me, (Job’s 1, 2 and 3) I prepped another crock pot meal.
Chicken drumsticks are sooo cheap. Last time we shopped I think they were .99 a pound! We buy them in big batches and freeze them in groups of 5 or 6.
When I want to make them, I defrost them, remove the skin, and soak them in a sauce overnight. In the morning, just plug in the crock pot and cook on low for 8 hrs.
Last nights’ sauce was this!
This steamer was a combo of potato, zucchini, squash and carrots. To be honest, this wasn’t my favorite steamer. The starch from the potatoes kind of ….exploded? and the veggies were really saturated.
Idk if that makes sense but it’s what happened.
IDK about anyone else but I always feel like such an animal eating meat off the bone. 🙂
The chicken is almost impossible to pick up without falling off the bone! It’s so juicy and full of great flavor from the bone.
The leftover meat is really good on salads and homemade chicken salad.
