Something Nolan and I have been “working on” this year is cooking more meals. We love to cook almost as much as we love to eat, but after a long day of work and working out, sometimes it’s just easier to have cereal or go out. We fell into a pretty terrible pattern of this in December and we vowed to pull ourselves out of the hole. Recently we have had some spectacular meals come out of the kitchen.

Last Week:

MONDAY:

Crock pot bbq pulled chicken

I was lacking a bit in ingredients, so this batch consisted of: a chicken breast, 1/2 a yellow onion, 1/2 a cup of bbq sauce (I used Bull’s-eye) and 1 tbsp of white apple cider vinegar.

While Nolan made a pulled chicken sandwich, I ate mine as is, and served it along side a simple salad of tomatoes, carrots, peppers and avocado, and some steamed carrots. Discipline!

Wednesday:

Spaghetti and meatballs!

My fairy godmother makes incredible meatballs and we were very lucky to receive a big batch after the holidays. After defrosting about half the batch, I simmered them in a can of Hunts garlic and herb spaghetti sauce ($1 a can) and added in my own ingredients which included fresh basil, oregano, Italian seasoning, bell peppers (frozen) and spinach (also frozen).

Thursday:

Salmon 2 ways

We finally used the last bit of salmon we bought on sale last month. Nolan couldn’t decide whether he wanted to make lemon pepper salmon, or something spicy, so he made both!IMAG4476Left: Lemon juice with cracked lemon pepper seasoning. Right: Pampered Chef’s Spicy tangerine rub with Nolan’s homemade mango hot sauce.IMAG4230I think the tangerine was my favorite! It was sweet and tangy, but it didn’t overpower the fish. Homemade shrimp scampi!

Shrimp was on sale for $3.99 a pound at Price Chopper. We weren’t 100% sure what we were going to do with it until we found this.

Instead of adding 1/2 a stick of butter and oil, I substituted with I Can’t Believe It’s Not Butter, and 1/4 cup of skim milk.

Tossed over whole wheat pasta… dinner was served!

I know we are only 2 weeks into the new year, but if this is a sign of things to come, I am very excited for 2013’s eats. 🙂
