I cannot believe it’s August! With a new month comes a new theme for What I Ate Wednesday!
This summer I have certainly fallen into a food and fitness routine. I have been enjoying:
- summer salads and omelets with fresh produce from our farm share
- grilling
- frozen treats
- outdoor running at Cushing Park,
- occasional water workouts
I recently updated my Summer Bucket List!
I have made a decent dent but I still have a ways to go. I know for sure t hat I will be able to cross a few things off the list in a few weeks. 🙂
**Onto the food!**
BREAKFAST:
Blueberry waffles with mixed berries and a delicious cup of raspberry chocolate coffee!
POST WORKOUT SNACK:
Another Cucumber Melon Madness smoothie!
Let’s play a little game called Summer Salad Scavenger hunt! Can you spot all the ingredients?
           Salad:
- romaine lettuce
- cherry tomatoes
- carrots
- green peppers
- green beans
- cucumbers
It is topped with leftover tuna salad and a drizzle of lite Caesar dressing. With the exception of the tuna, every ingredient in this salad came from fresh from the farm!
SNACK:
Dinner was a new recipe and a VERY successful one. O.M.G. I pulled out some leftover haddock and decided to stuff it with some deliciousness.
I will post the full recipe tomorrow but trust me when I say it was super easy and probably the best fish dish I have ever made. EVER.
DESSERT:
During the summer, I cannot live without my frozen treats! At 100 calories a piece, these Italian Ices have been coming in handy!
