Buffalo Chicken Taquitos

Hey there!  How’s it going? You know that feeling the next morning after a night of drinking where you’re not sure if you’re hungover or still drunk? I cannot figure out if I’m experiencing a culinary hangover or if I’m still full.

If you couldn’t tell from yesterday’s post, I ate a ton of food this weekend. Between the all you can eat hot dog festival on Saturday and the incredible tailgating spread we put out to watch the Bruins on Sunday, my stomach is begging for mercy.

On that note,  I have a few great recipes to share with you all from our tailgating festivities on Sunday.

The one I’m going to share today is certainly one that will make it into our appetizer rotation!

taquitosIn a nut shell, this is my buffalo chicken dip, rolled up in tortillas and baked!

I used a new-to-us Frank’s hot sauce. It’s called Red Hot “Thick” and it’s specially designed for dips and sauces. There was definitely a consistency difference and it worked out very well in this recipe.

FYI: Do NOT use corn tortillas! We tried and they just fell apart when we attempted to roll them up. It was a mess.

When adding the chicken, I just used my hands to shred it a bit before putting it into the pot. The thicker it is, the harder it is to roll the tortillas.

I have talked before about the endearing qualities my husband has, and his ability to roll a perfect tortilla is one of my favorites. I cannot do it to save my life, so he happily took over this step!

They came out so well, I was siked! They were crunchy on the outside and spicy and gooey on the inside. Some dipped them in ranch or blue cheese, but I enjoyed mine naked.  We tend to make a lot of dips for our parties so it was a nice change of pace with a hand held appetizer.

This week’s WIAW is a bit different. Since I have been home sick the past 2 day, I’ve had lots of time to catch up on blog reading and food searching. I found myself drooling over others’  meals and culinary creativity.
